Another idea, another recipe. Péter Buday , the national coordinator of CÖF, Norbert Heizler, learned about the preparation of healthy, but slightly different from traditional dishes.
The recipe for the finished delicacy:
Pancakes filled with parsley and green pea meat cream with tomato cream sauce
Filling: 600 g of minced pork fat, 400 g of steamed green peas, 400 g of cleaned and minced parsnip root, 200 g of finely chopped red onion,
70 g pasteurized egg juice, 18 g salt, 3 g ground black pepper, 75 g corn starch.
Preparation: Fry the chopped red onion in a little cooking oil. I also fry the meat on this onion. I add the steamed and coarsely crushed
green peas. Season with salt and freshly ground pepper. I add the minced parsley root and simmer until semi-hard. Then I mix it in
starch and eggs as well. I constantly stir it over the fire, but I am careful not to let the egg precipitate. I pour the filling into the pancake. THE
instead of pancakes, I can use tortillas, and it can also be stuffed into pita bread.
(This filling is also suitable as a filling for a meat pancake, which I serve with paprika sauce, but it is also perfectly suitable for a casserole.)
Tomato cream sauce: 100 g of red onion, 100 g of grated celeriac, 800 g of chopped peeled tomatoes, 2 g of fresh basil, 8 g of salt,
3 g ground black pepper, 20 g fresh lemon juice, 150 g cream.
Preparation: I fry a few chopped red onions in olive or sunflower oil. I also fry the grated celery tuber on the red onion. It's a bit important
to fry the celery, because it will give the sauce its sweetness instead of sugar. I salt and sprinkle with a little pepper. Fresh basil too
I'll cut in. I pour chopped, peeled tomatoes on top, which can easily be canned. I squeeze in the juice of half a lemon. Boiling and slow
on fire for at least half an hour, boiling very slowly. When it has thickened, I blend the sauce. I bring it to a boil again and add the cream.
(This type of tomato sauce, without the cream, can always be used as a basic tomato sauce.)
